Outer surfaces dry out and can support growth of moulds resulting in trim and evaporative losses. Evaporation concentrates the remaining proteins and increases flavour intensity; the moulds can contribute a nut-like flavour. The majority of the tenderising effect occurs in the first 10 days, although two to three days allow significant effects. Beef is a good source of minerals such as zinc, selenium, phosphorus, iron, and B vitamins. Red meat is the most significant dietary source of carnitine and, like any other meat pork, fish, veal and lamb is a source of creatine.
